My headaches have improved and I have lost nearly a stone in weight which is a great feeling! May – you are very well liked and respected. I have told a lot of people how you have helped me and you are inspiring to others that need help in ‘seeking balance'. Thank you.

Hydie Worrall – Aberystwyth. Nutrition level 2 course.

I found the course very interesting with lots of useful information and enjoyed the relaxed atmosphere. The labelling session was particularly helpful and will help me to make better choices when I go shopping.

Red onions - These are part of the group of root vegetables known as alliiums. They contain sulphur compounds which are useful for fighting infections. Quercetin is also found in onions which is known as a natural anti - histamine.
They contain important antioxidants that help to block cancer. In ancient Greek times athletes used to consume large quantities as it was said to ' lighten the balance of the blood'.
They are great sliced thinly and added to salads or stir fry's, adding interest and colour to meals as they have a milder flavour than white onions. Including plenty of these will help to make your body warmer and improve circulation.
