Mixed sprout coleslaw

Serves 4 people

•  100g sprouted beans
•  100g organic white cabbage / red cabbage
•  1 organic eating apple
•  2 organic carrots
•  1 small organic red onion (optional)

Dressing

•  1 small pot of organic natural yoghurt
•  1 tablespoon of mustard seeds / ground cumin seeds
•  1 tablespoon of lemon juice / lemon zest or both
•  1 tablespoon of chives

Method

Slice up the white cabbage and the red onion as finely as possible. Grate the carrots and apple up. Mix altogether in a bowl with the sprouted beans (whatever combination you like of beans).

Pour over the yoghurt, mustard seeds and lemon juice, then mix everything together. Sprinkle some chopped chives on the top before serving.

Sprouted seeds and beans are highly nutritious and contain high concentrations of valuable enzymes, vitamins, minerals and are a great source of protein. If you grow them yourself then they are growing right up until the moment you pick them, so you can't get fresher!

Natural yoghurt is a much healthier alternative to mayonnaise. Try this dressing on other salads where you would usually use mayonnaise and you will be surprised how delicious they are as well as cutting out those unwanted bad fats.
