Salmon with a lemon and dill dressing

Serves 4.

Ingredients

Four wild salmon fillets 4 – 6 oz each
Sprig of fresh dill
4 slices of lemon
Seasoning as required

For the lemon yogurt and dill dressing

100g of live plain yoghurt
1 tablespoon chopped fresh dill
1 tablespoon of fresh chopped chives
Half a freshly squeezed lemon

Method

1. Sprinkle salmon fillets with seasoning if required and place on a baking tray. Lay a slice of lemon on top of each fillet along with a sprig of dill.

2. Bake in the oven at 150 centigrade or 375 Fahrenheit for 20 minutes. Alternatively they can be steamed for 20 minutes.

3. Separate fish from skin by sliding a spatula between them and transfer the fillets to a plate. Serve with lemon yogurt and dill dressing.

4. To make the lemon yogurt and dill dressing, combine all the ingredients together and refrigerate until ready to use.

5. This is a simple, quick yet delicious meal that I often make. It is great served with some new potatoes and a green salad, or some steamed vegetables of your choice. Preferably ones that are in season to get the most nutritional value from them.
